PRODUCTION OF YEAST PROTEIN BY CANDIDA UTILIS FROM PINEAPPLE JUICE
I. SHAKE FLASK STUDY

Summary: This study was undertaken to determine the possibility of cultivating Candida utilis on pineapple juice as substrate. Investigation of the desirable composition of medium for growth of the yeast was first studied with the emphasis on yeast yield and its protein content. The growth of C. utilis on pineapple juice supplemented with various sources of nitrogen such as peptone, urea, and ammonium sulfate, and other nutrients, i.e., phosphorus and growth factors, was examined in shake flask study. The concentration of sugar in pineapple juice was diluted to 2% (w/v). The pH during cultivation was kept at 4.0. Yeast growth was measured by determining yeast dry weight or absorbance of yeast culrure at 500 nm. It was found that pineapple juice supported good grawth of C. utilia with the additions of (NH4)2S04 and KH2P04 at 0.5% (w/v) each as the extraneous sources of nitrogen and phosphorus. The yeast yield and its protein content after 64 hours of culiivation were 42.1 and 55.2%, respectively.
